Whipped Sweet
Potatoes

Use
3 medium to large sweet potatoes. Peel, wash and
quarter them in big chunks. I use a pressure cooker and
fill water to almost top of potatoes; pressure 8
minutes. Drain liquid into a measuring cup and set
aside. In a mixing bowl beat potatoes with some liquid,
some butter or margarine, some sugar, and about 2
handfuls of GF miniature marshmallows (Kraft or Kroger
brand). Work fast so the marshmallows will melt, add
approx. ½ tsp. vanilla extract (I use Adam’s Best), whip
all. Season to taste. Put in a covered dish in the
oven at 300 to hold until ready to serve.
