Norm’s Favorite Chocolate Cake
(Double recipes
for a 9x13 inch pan)
1 ¼ cup Dacia’s
Baking Mix
1 tsp cinnamon
¼ cup sugar
3 tbsp cocoa
2 slightly beaten large eggs
2 tbsp oil
¾ cup apple juice
Blend dry
ingredients then add liquids, mix well but do not over
mix. Pour into 8 or 9 inch cake pan or 8x8 Pyrex dish
sprayed with nonstick cooking spray. Bake 20-23 minutes
at 350 degrees or until toothpick inserted comes out
clean. (25 minutes for 9x13 cake)
Icing
¼ cup butter
2 Tbsp cocoa
3 Tbsp milk
½ tsp Adams vanilla
1 ½ cups powdered sugar
¼ cup chopped pecans
Combine butter,
cocoa and milk in a sauce pan or microwave safe bowl and
heat to boil, stirring occasionally. Add vanilla and
sugar. Beat smooth with a whisk and add pecans. Pour
over hot cake.
