French Tea Cakes require a special pan to form the shell
shaped delicacies. They can be purchased at Kitchen
Specialty stores.
Combine:
Gradually add:
½ tsp. Crème
Tartar 1 cup
White Rice Flour
3
eggs
1/4 cup Cornstarch
1 tsp.
Vanilla
1 tsp. Baking Powder
2/3 cup sugar
Beat until
QUADRUPLED in volume!
Stir in:
Fold
in: 3/4 cup Melted &
Cooled Butter (Not margarine)
2 tsp. Lemon
rind
Brush each form
with melted butter, drop in one tablespoon of batter.
Bake at 350 degrees for 10-12 minutes.
Sprinkle with
Powdered Sugar
