Fudge Pecan Pie
Betty Barfield
4 semi-sweet
chocolate squares
2 sticks margarine
4 eggs
1 ¾ C sugar
2 tsp pure vanilla
1 C GF flour blend (I used Authentic
Foods Classical Blend)
1 C chopped pecans
Melt chocolate
and margarine. Set aside. Beat eggs, sugar and
vanilla. Add flour, mixing well. Add melted chocolate
mixture and pecans. Pour into a Pam-greased pie plate.
Bake at 325 for about 45 min. Center will not be
completely firm. Serve warm with vanilla ice cream.
It’s very similar to Outback’s “Thunder Down Under”.
