Cinnamon Muffins

1/2 cup bean or rice flour blend
1/2 cup brown sugar
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp xanthan gum
1/4 tsp salt
2 eggs
1/4 cup butter, melted
1/3 cup milk
1 apple, peeled and diced

Combine gluten-free
flour blend, brown sugar, baking powder, xanthan gum,
cinnamon, and salt.

In a large bowl,
combine eggs, butter, milk, and apple. Stir in dry
ingredients.

Spoon into oil
sprayed muffin pan. Bake at 350 degrees for 40 minutes
or until a toothpick inserted in the center comes out
clean.
Makes 12 muffins.
