cans chopped green chilies

lbs. Monterrey Jack grated cheese (can substitute light
Mozzerella)
1
large can evaporated milk (no fat ok)
Serendipity seasoning salt
GF
flour
Paprika
Spray with Pam a 9x13 inch Pytex dish. Sprinkle bottom
with GF flour, ½ of the chilies, paprika and seasoning
salt, and half of the cheese. Next repeat GF flour,
chilies, seasoning salt, and cheese.
Beat eggs and milk, gently pour over cheese in pan.
Bake at 325 degrees for 40 minutes to 1 hour till firm
in the middle.
Cover with foil cool 10 minutes, cut into squares.
Serves 12.
You can make this a day ahead and then bake when you
want to. It holds well in the oven. It is good with
fruit (mixed, or apple slices), GF English muffins,
juice, jelly and sausage if desired.
For added zest, serve with hot sauce.
If you substitute Better ‘n eggs, use 6 eggs and 6
Better ‘n eggs equivalent; cook 325 degrees for 1 hour.
The last 10-15 minutes cook at 375 degrees uncovered. .
