cups thinly sliced zucchini (about 4 small)
1 cup gf Bisquick-type mix (blend of gf flour &
shortening)
1/2 cup grated Parmesan cheese
1/2 cup finely chopped onion
2 tbsp. chopped fresh parsley
1/2 tsp. salt
dash of pepper
1/2 tsp. oregano
1/2 tsp. seasoned salt (Morton's Nature's
Season-seasoning blend)
1/2 tsp. basil or marjoram
1 clove garlic, finely chopped
1/2 cup vegetable oil
4 eggs, slightly beaten ( or use an egg substitute)
Mix all ingredients and spread in a 9x13 greased pan.
Bake at 350 degrees until golden brown,
about 25 minutes. Cut into 2x1 rectangles. Refrigerate
any remaining appetizers. Makes 4 dozen. May eat warm,
or cold. May be frozen if you wish to make ahead.
