White
Yeast Bread

Dry Ingredients:
3 cups gluten-free flour mix
2-1/2 tsp. Xanthan gum
1/4 cup dry milk powder
and 1 Tbsp. blended potato buds
or potato flour (not potato starch)
(or 1/3 cup DariFree powder)
1 tsp. unflavored gelatin (optional)
1 tsp. egg replacer (optional)
1/4 cup sugar
1 tsp. salt
2-1/4 tsp. dry yeast granules

Wet Ingredients:
1-1/8 cups water (if needed add more
water, a teaspoon at a time)
1/4 cup melted butter or margarine
2 eggs
1 Tbsp. honey (or molasses for a brown bread)
1 tsp. apple cider vinegar

Using Electric Hand
Mixer Oven Baked:
One 8x4-inch loaf

In medium mixing bowl
combine dry ingredients; set aside.

In large mixing bowl
combine wet ingredients. Beat with electric hand mixer
on low until blended.

Add 1-1/2 cups of dry
ingredients: beat with electric hand mixer on low to
blend then beat on high until very thick, 1 to 1-1/2
minutes. With wooden spoon stir in remaining dry
ingredients until well mixed,. pushing dough against
the side of bowl with spoon to mix well.

Spoon dough into
greased 8x4-inch loaf pan. With wet hand shape and
smooth top of loaf. Oil spray or brush top of loaf
with melted butter.

Let rise until center
is almost 1-inch above top of loaf pan.

Bake at 350 degrees
for 50 to 60 minutes.
Using Bread Maker:
1-1/2 pound loaf

In medium mixing bowl
combine dry ingredients; set aside.

In small mixing bowl,
combine water and butter or margarine, place in
microwave on high for 1 minute to melt butter. Add
eggs, honey, and vinegar; beat with wire whisk or egg
beater until eggs are well blended. Pour into bread
machine pan that has been removed from bread maker.

Pour dry ingredients
over the wet ingredients.

Select white bread
with medium crust setting. Start bread maker.

After dough has
kneaded about 3 minutes look at dough for right
consistency. The consistency of frosting, holds its
shape. Scrape the sides of pan with spatula to blend
ingredients, if needed.

When the bake cycle
is complete remove pan from the bread maker, invert
pan and shake gently to remove bread.

Cool top down on wire
rack before slicing.
Cinnamon Raisin Bread:
Add 1 tablespoon cinnamon to dry ingredients. Add 1 to 2
cups raisins during the mixing cycle. May add 1 cup
chopped nuts.
