(Makes 2 crusts)

cups rice flour

cups tapioca flour
2/3
cup powdered milk
3 ½
tsp xanthan gum
1
tsp salt
2
yeast cakes or 2 tblsp dry yeast granules
1
cup lukewarm water (105 to 115 degrees)

tblsp sugar
3
tblsp shortening
½
cup hot water
3
egg whites
In
bowl of your heavy duty mixer, put flours, dried milk,
xanthan gum and salt. In a separate bowl crumble the
yeast into the lukewarm water with the tblsp of sugar
added. Melt the shortening in the hot water. With the
mixer on low, blend the dry ingredients. Pour in the
hot water and shortening, blending to mix. Add the egg
whites, blend again, then add the yeast mixture. Beat
on high speed for 4 min.
Spoon half the dough onto a greased pizza stone, cover
with saran wrap. Spray top of saran wrap with Pam and
spread dough on stone with edges turned up a bit.
Repeat on second stone. Fill with favorite pizza
sauce. Bake in preheated 400 degree oven for 20-22
minutes.
Topping:
(For
one medium pizza)
In a
blender, combine:

lrg can Del Monte diced tomatoes*

tsp oregano
¼
tsp garlic powder (or to taste)
¼
tsp salt
¼
tsp basil
¼
tsp thyme
¼
tsp sugar
*Or,
you can use the Del Monte can of tomatoes that already
has garlic, basil and oregano in it and add the thyme,
salt and sugar. Puree this until well blended and
spread on dough. Top with grated mozzarella, pepperoni,
cooked sausage, veggies, etc. Then add fresh grated
parmesan. Bake in 350 degree oven until crust is done.
