Sausage Balls

lb. regular GF sausage, room temperature (I used Jimmy
Dean, Owen’s is GF also)
3 cups cheddar cheese,
grated (I used Kraft)
2 ½ cups Pamela’s GF
Pancake Mix
¾ c. Crisco shortening
or butter
Cut
in Pamela’s Mix and Crisco or butter until no lumps
appear; add sausage, then grated cheese. Mix
thoroughly. If it seems to dry add some Better’n Eggs
to take up some of the dryness. Roll into small balls
and bake at 350 for 25 min. Makes approximately 75
balls and freezes and re-heats well.
