I
came up with this dish after eating a similar (and more
fattening) dish at the State Fair. The sausage is my
addition.
1 package of Hillshire Farm Smoked Turkey
Sausage, cut in 1 inch slices
1 large onion, sliced (or 1 cup chopped frozen)
1 large sweet potato or 2 small
2-3 medium golden or white potatoes
Canola oil
· Cook the sweet potato in the microwave for 2
minutes and allow to cool. Peel and cut into bite size
chunks. Cut other potatoes into bite sizes pieces,
leaving skin on.
· Line the bottom of a 9x13 baking dish with
Reynolds Release foil. Mix potatoes and onion
in the 9x13 dish and drizzle with 3 Tbsp of oil. Mix
to coat and season with pepper to taste. (Skip the salt
because the sausage is really salty.)
· Bake for 30 minutes at 375 degrees. Stir at 15
and 30 minutes.
· Add sausage and bake another 15-20 minutes until
potatoes are tender.
