boneless chicken breasts
Rice
Flour or GF mix (regular flour if you don’t need Gluten
free)
1
jar apricot preserves
1
tbsp dry or 1 tbsp fresh rosemary

tbsp lemon juice
½
tsp crushed garlic (from jar) or 2 cloves
¼ -
½ tsp pepper
½
tsp salt (preferably coarse grain like kosher salt)

tbsp Dijon mustard
Spray a baking dish with nonstick cooking spray
Coat
chicken breasts in flour and place in dish
Melt
preserves in microwave (enough to soften but not boil)
Mix
with remaining ingredients and pour over chicken
Bake
for 25 min at 350 degrees then increase temperature to
broil for 4-5 minutes to brown and caramelize top.
Watch closely during the broiling stage.
Serve with rice, noodles or mashed potatoes and a salad.
